This is my new favorite celebration cocktail! Let’s be honest – nothing beats a glass of real champagne (yummers) but this is a lovely, fragrant alternative that also makes for a very refreshing summer sipper. Cheers to 2021!
Rosemary Ginger French 75 (makes 2 drinks)
1/4 cup white sugar
1/4 cup water
1/2 inch knob of fresh ginger, peeled and sliced into coins
1 branch rosemary
3 oz (2 shot glasses) gin (I prefer Hendricks!)
Juice from 1/2 a lemon
For the rosemary-ginger syrup: combine sugar, water, ginger, and rosemary in a small saucepan over medium-high heat. Stir until sugar is dissolved. Allow mixture to come to a boil, then remove from heat and let the rosemary and ginger steep until cool (20 – 30 minutes). Strain into a small container and refrigerate. Refrigerated syrup will keep for up to one month.
For the cocktail: combine gin, lemon juice, and 1 Tbsp syrup in a martini shaker or large glass with ice. Stir until mixed. Divide between 2 champagne flutes (no ice) or 2 tall glasses (with ice) and fill with sparkling wine. Garnish with fresh rosemary, if you’re feeling it. Sip on a hot day or anytime you’re feeling celebratory!
